"Wine To Water is a 501(c)(3) non-profit aid organization focused on providing clean water to needy people around the world. Nearly 1 billion people in the world today lack access to adequate water and 2.5 billion people lack access to improved sanitation. We are devoted to fighting this epidemic. Wine symbolizes fortune in our society. Our goal is to give the fortunate population an opportunity to fight for those who can’t fight for themselves.

Wine To Water was a dream that became a reality in the beginning of 2004. We held our first fundraiser in Raleigh, North Carolina in February of 2004 to see if in fact it was an idea that people would respond to. The concept was originally to put on benefit wine events, such as tastings, then use all of the money raised to support water projects around the world. The first fundraiser was a great success. With its success, and others to follow, came a confidence that Wine to Water would continue to grow as an organization. As a result, wine tastings became just one of many ways that we raise awareness and support for the global water crisis. We have worked to provide clean water and sanitation in many countries including Sudan, India, Cambodia, Uganda, Ethiopia, and Haiti." - Winery Notes

Uncorked's favorite time of year:  Fall!   This is the season for new releases and holiday deals on our favorite wines.  The only way to heighten our enjoyment of this special time of year is to pass the savings along to our clients.

Two weeks ago, we had the pleasure of meeting with and tasting through the wine selections from Aurelio Montes and his distinctive Chilean, Argentine and California portfolio in Charlotte, North Carolina.  The tasting was lead by Aurelio and it was a unique opportunity to taste the Montes, Kaiken and Californian wines side by side.

"Chairman and Winemaker. Head Winemaker with over 25 years experience at the Undurraga and San Pedro wineries. An extensively traveled man. In 1995, his colleagues granted him the "Chilean Winemaker of the Year" award. The SNA (National Agriculture Association) named him "Personality of the Year 2002”, and honor directly bestowed by the President of Chile. He has been a Wine Consultant for Fundación Chile (a Foundation created by ITT and the Chilean Government), for Casa Lapostolle, Echeverría, Santa Inés, San Carlos, Pisco Capel, amongst others. Our wines are proudly named after him: MONTES. Aurelio Montes is broadly renown by top trade magazines as the finest or one of the finest winemakers in Chile. In the 80`s and 90`s, his leadership brought a revolution to quality standards and his insight the discovery of the affluent Apalta and Marchigüe valleys, and the innovation of slope plantations. He is an Emeritus Member of the Chilean Wine Guild." - Winery Notes

We were pleased to find that despite all of his accolades and successes that Aurelio was warm, energetic, engaging, but most of all - funny!  The tasting was a delight.  Learning about his personal wine journey and the nuances of each project was enlightening and provided a deeper respect for both the man and the products.  Uncorked looks forward to supporting these quality products for years to come!

Product Description

The House was founded by Philippe Clicquot in 1772. Since its inception, Veuve Clicquot has been a specialist in Champagnes based on Pinot Noir, especially Rosé. In 1803, François Clicquot was married to Barbe-Nicole Ponsardin. Madame Clicquot was widowed just two years later. Veuve Clicquot (Veuve means widow in French) took over her husband's business. In 1810, the house took the name Veuve Clicquot Ponsardin. The way that she ran her company, from risky overseas ventures to startling technological innovations, changed Champagne forever. Her motto is still the guiding principle of our company – "Only one quality – the finest." In 1816, Mme. Clicquot invented the process, called rémuage or riddling, that removes the yeast from the bottle. She used holes cut in her kitchen table to perfect the method of slowly tilting and turning the bottles to gather the spent yeast in the neck of the bottle. Once settled it could be removed by freezing the neck in a brine of salt and water, removing it, and recorking.
The company was taken public in 1963, and merged with Louis Vuitton Moët Hennessey in 1986. Today, Jacques Peters is the chief winemaker at Veuve Clicquot, and was appointed cellar master in 1985. He has undertaken an ambitious program since this time to upgrade the grape sources, improve the vineyards, and improve the cellars and production facilities.

"David Gordon has been the Wine Director at Tribeca Grill since 1990. Several years ago, he began to use his contacts in Napa and Sonoma to source and produce wine under the Bacchus and Jeanne Marie (his wife) labels. Initially the small batches made were sold only at Tribeca Grill, Nobu and Montrachet. Producers such as Caymus, Lewis Cellars and Miner Family provided grapes and helped with the winemaking. As consumer interest grew, he decided to try and produce greater quantities and make the wine more available to retailers and other restaurants. There is great continuity on these wines now. Ripe and soft, easy to drink style blended with 20% Merlot." - Winery Notes

Bacchus Cabernet 2009 Tasting Notes

Medium bodied with ripe plum, black currant, and blackberry flavors with a touch of mint. Cedar and dusty earth emerge on the long, layered finish.  Source- 75% Paso Robles, 15% Central Coast, 10% Napa Blend- 90% Cabernet Sauvignon, 10% Merlot Winemaking- 50% stainless steel, 50% neutral oak barrels Aging- 10 months in neutral oak barrels.

Bubbles, Bubbles, EVERYwhere!

In honor of the much anticipated Master's of Wine Annual Champagne Tasting rescheduled for this week (thanks Hurricane Irene!), bubbles of all origins and sizes are our feature this week!

Generally speaking, most American view Champagnes or Sparkling Wines as merely a celebratory libation.  Uncorked is out to change all of that!  No sound is quite as lovely as the "pop" from a pressurized bottle of bubbles.  It's also one way to ensure that all heads in a restaurant will turn in your general direction.

Proseccos and Cava's can be lovely accompaniments to spicy Asian dishes and sushi.  Sparkling Shiraz and Malbec have also staked their claim on the barbeque meat lovers.  And how do we tailgate at Uncorked?!  Why with 187ml bottles of Champagne of course!  This single serving is perfect for tailgate parties,  baby showers, wedding favors, movie theaters...need I go on?

But perhaps the best combination, and most timely application for Sparkling Wines or Champagne is as a partner to our beloved Thanksgiving Dinner.  Bubbles of the Rose stature perform exceedingly  well as Tom Turkey's partner.

Monastrell has been gaining popularity produced as a single varietal from Spain but it is well known as Mourvèdre in Rhone-style blends.

"This winery originated in 1916, when Juan Gil Giménez, great-grandfather of the present generation, started getting involved in the world of wine, building a winery in the heart of Jumilla. His son, Juan Gil Guerrero, dedicated his life to this world. But the ones who really consolidated the project were Juan Gil González and his brother Paco, the founder's grandsons. They forged an image of quality, efficiency and reliability which the present generation is trying to maintain and improve as much as possible.
At present, the Gil Vera family, Juan Gil Lencina's great-grandchildren, are the owners of Bodegas Juan Gil. They decided to start a new cellar on the property that the family owns in Jumilla, in order to get it adapted to the market. This new cellar is situated in "Término de Arriba" in the northwest of the city. It is so called because it is the highest point in Jumilla. "We began with a traditional Alsatian mix of Pinot Gris and Gewurztraminer. The two grapes together become a mysterious mix of taste and aromas best described as baked nuts and spice. Feeling the blend was too traditional, Winemaker Ricardo d. wanted to enrich the Pinot Gris with tropical notes and flavors. Chosen were the white peach and tropical flavors found in the Verdelho grape when grown in California.  The taste is crisp, but full. The wine is dry." - Winery Notes

Looking for something new and exciting?  Stuck in a wine-rut?  (Although that never seems like a bad place!) Uncorked has unearthed some new varietals for your palate's pleasure.

Have you ever tried a Viura, Malvasia, Tempranillo Blanco blend?  Or what about a Prieto Picudo or a Mencia?  Three new Spanish wines and varietals have been added to the Uncorked website.  And all wines are under $15 per bottle!

Indulge your experimental nature (we know you have one!) and try these wines today...Uncorked is confident that you'll be pleased with these new choices.  Want to know more about each varietal:

Viura (also called Macabeo):  Widely grown in Rioja.  The grape is used to make mildly acidic and young white wines mostly suitable for early consumption or blending with other varietals.  It is often the main grape of white Rioja and is sometimes blended in small amounts with Tempranillo and red Garnacha, both in unoaked and oaked versions.  Commonly used as a blending grape for Cava as well.

Malvasia:  Traditionally a grape used to make fortified wines.

Tempranillo Blanco: Tempranillo Blanco, or White Tempranillo, is a relatively unknown grape, planted in tiny quantities exclusively in Rioja. The grape itself is the result of a natural mutation of the more common 'red' Tempranillo, and was only discovered in 1988 on a vine in a vineyard in Murillo de Rio Leza. DNA analysis discovered a natural 'albinism' affecting the genes that resulted in a yellow/green skin pigmentation instead of the usual blue/purple.

Prieto Picudo: Prieto Picudo is a red wine grape grown around Castilla-León in northern Spain. Mainly used in the production of general red wines known as Clarete.

Mencia: Primarily found in the northwestern part of Spain.  The Mencía grape can be seen as the axis around which all Bierzo wine making revolves. Few grape varieties better express the terroir of a region of calcareous clay and slate substrata.

In the mouth the wine is rich and dense, powerful for a Pinot Noir, with a little young tannin that will melt away with years in the bottle. The ripeness of the vintage is evident in the layered notes of plum, cranberry, pomegranate and molasses. The dense, fleshy texture continues through a long, juicy finish.

"Unconventional would be the only way to describe the path Ms. Andi Gray
has taken to become the GAGA Winemaker Extraordinaire. Born outside of
San Francisco, California, Andi grew up in the Sierra Mountain foothills, down a long road off a quiet, country two lane road. Her childhood was centered around nature and what has become a lifelong love of animals. In high school, she was one of the school mascots – what else, a Bruin!

Quite through serendipity, Andi was hired as a Harvest Lab Tech and, as they say, the rest is history. Andi fell hard for winemaking. Realizing wine was her true calling, she worked her way through the ranks of the lab and the cellar, gaining invaluable first hand insights into the nuances and intricacies of fine winemaking, ultimately becoming the winemaker for GAGA Wines."  -Winery Notes

The Gainey family was among the first to recognize the Sta. Rita Hills as uniquely suited to classic, cool-climate varietals. For 20 years, they had sourced their fruit from all parts of Santa Barbara County, but this area always stood out: Sta. Rita Hills produced the best fruit every year. In the early 1990s, the Gaineys began searching for suitable vineyard land in the region.  The 120-acre Evan’s Ranch, named for Dan Gainey’s great-grandfather, is the result, with 47 acres under vine—11 different Chardonnay clones, 10 clones of Pinot Noir (primarily high-density plantings) and four clones of Syrah. Dan Gainey worked with other growers to obtain federal approval for the new Sta. Rita Hills appellation in 2001.

"Made in a fruit-forward style, the wine’s bountiful cranberry, strawberry, pomegranate and black cherry aromas carry delightful hints of red licorice, rose hips tea and white pepper. The supple, deeply concentrated palate doubles down with rich cherry pit, blackberry and black cherry flavors that mingle nicely in the long, zesty finish with tea-leaf spice, light pepper and refreshing mineral tones. Roasted game hen, grilled herbed chicken, roast duck in a light cherry sauce and black olive pizza make perfect partners for this pretty, polished Pinot, which will develop beautifully in bottle for another two to three years." - Winemaker Notes

First, it is that time again for Uncorked to host our quarterly WOW: Wine on Wednesday.  The WOW is a FREE tasting hosted for the public in the Charlotte Area.  This month, Uncorked has partnered with The Wooden Vine Bistro in Uptown Charlotte.  The Wooden Vine is under new ownership and Uncorked is pleased to show case this fine, locally owned Charlotte wine bar.  Please join Uncorked for our tasting on Wednesday, June 15, 2010 from 5:30pm-7:30pm. Jorge Ordonez Bontani Moscatel Seco 2010

Finally, Uncorked is excited to feature a new wine to the website, "Botani" Moscatel.  Moscatel is the Spanish version of the white grape, Muscat.  This is an extremely versatile grape that can take on many different treatments.  While very aromatic and floral on the nose, this particular wine is drier than one would expect.

It pairs well with foods that are typically challenging to us wine lovers: Crab cakes, asparagus, and even roasted tomatoes!  And imported by Jorge Ordonez, you know that this is a quality wine and one with which you can feel confident trying even if it may be outside of your wine-comfort zone.

Product Description

With the 2004 vintage, were born the first wines from this winery, located at the end of Almáchar, in the heart of the Axarquia Malaga, a mountainous region of steep slopes and slate soils, along the Mediterranean. This is one of the oldest in Europe vitinícolas. It is the first winery established in this locality, as the traditional destination of these grapes was the production of raisins. Perhaps the newest part of this proposal was trusting the oenological winemaking in the Austrian winemaker Alois Kracher, who was undisputed number one sweet wines in the country. Participating in the cellar, with his son Gerhard Kracher, who succeeded him in 2008, a group of businessmen in Malaga, with the importer Jorge Ordonez in front, this original project leader, and his sister Victoria.

An aromatic pleasure. Intense fruity aromas in which the notes of tropical fruit (pineapple), grapefruit and citrus stand out. Light background of white flowers and honey. Fresh and dry wine. Very tasty and smooth mid palate. The notes of ripe muscat have a high presence. Long and pleasant after taste. A very interesting wine with a good contrast between sweet and dry flavors.

With over 1500 acres of vineyards standing at the extreme elevations of 5500-6600 feet above sea level, Michel Torino is the most important winery in Argentina's Cafayate Valley set in the rugged high-dessert terrain of the country's northwest.
Brothers Salvador and David Michel founded the winery in 1892, 22 years after discovering the Cafayate as an area suitable for fine wine production. This unique climate averages 330-340 sunny days per year with a low humidity and a great thermal range, with evenly warm days (82 degrees) and cool nights. Rainfall is sparce; averaging just 3-6 inches anually.  Each of the Michel Torino wines are hand-harvested in the estate's own vineyards high in the Andean foothills. The estate practices sustainable, environmentally friendly farming by minimizing the use of fertilizers and chemicals in the vineyard and winery.
The unique Cafayete climate manifests itself in the elegant, focused profile of Michel Torino's wines. These are wines with an indelible sense of place, wines which complement food rather than overpower, wines which are true to their origin.
"Cuma" means clean and pure in Aymara language.  All organic practices are carried over from vineyard to winery where the wines are carefully handled throughout the entire vinification process. Cuma is produced to be drunk young, therefore little oak is used in the winery; instead the wines are aged at cool temperatures in stainless steel tanks in an effort to showcase they're natural complexity and deep fruit flavors.

The wine shows a bright green/yellow color, the wine has aromas of rose petals and hints of jasmine and orange skin. On the palate, the wine exhibits fresh and floral fruit with a refreshing, bracing acidity. The palate flavors include fresh peaches and a floral taste that is typical with this grape.
