Torii Mor Winery was founded in 1993 by Donald Olson, MD who remains the owner to this day with his wife, Margie.  The winery was initially a small project that was intended to showcase the fruit from the vineyard.  Olson Estate Vineyard was planted in 1972 and is one of the oldest vineyards in the Dundee Hills AVA.  Since its modest beginnings in 1993, with just over 1,000 cases, Torii Mor has blossomed into a super-premium winery that focuses on small lots of handcrafted vineyard designated Pinot noir with an annual production of 15,000 cases.
With the commitment to preserving the environment and Earth, Torii Mor is making ecologically smart choices and farming sustainably, while continuing to craft high quality, complex wines that possess a quiet elegance.  Torii Mor is cultivating a sustainable business that respects the environment by assessing the overall carbon and energy usage.   The solar array, gravity flow winery in the Dundee Hills, erected in 2007, is LEED Gold and LIVE vineyard and winery certified.
The name TORII MOR was chosen by Dr. Olson as he felt it conjured a feeling of unique elegance.  Borrowing from the Japanese, the “Torii” refers to the ornate gates most often seen at the entrances to Japanese gardens.  “Mor” is a word in ancient Scandinavian that means “earth”.  By integrating these two distinct languages, the romantic image of a gate to an earth space, or passageway to beautiful things, is formed.  We believe that Pinot noir, more than any other varietal, is that beautiful gateway to the earth.

"This wine has aromas of earth, grape stems, dark berries and notes of mushrooms.  The flavors show a mix of mostly dark berries and dark cherries, earthiness, and spiciness followed by Graham cracker-barrel toast.  The crisp acidity carries the rich flavors to a long earthy aftertaste with cherries, dried red berries and spices.  The finish is long with notes of earthy mushrooms, red and dark fruit, oak spices and graham cracker oak toast.  The texture is rich and mouth filling.  The stem tannins add rich structure and are present from beginning to end, without detracting from the wine flavors." - Winery Notes

"The 2007 vintage will go down as perhaps one of the finest vintages in the past 20 years. A near perfect set in the vineyard was followed by superb growing conditions in the early and late spring months. The weather remained warm and dry during the growing and harvest seasons, with moderate temperatures, allowing the grapes to achieve full maturity and flavor potential.
Cabernet Sauvignon in the Dry Creek Valley is relatively undiscovered. Primarily known for Zinfandel, the valley actually has more Cabernet Sauvignon planted than any other varietal. The region’s terroir provides unique aromas and flavors to our Cabernet Sauvignon grapes. Bright cherry and black berry fruit, framed by floral and spice elements, create wines that speak to the distinctiveness of our home appellation." - Winery Notes
